For Haman’s Yahrzeit (16 Nisan) : Tongue

Did you know that the Purim miracle really occured during Pesach?

Well it did. Esther actually fasted on Pesach, which isn’t ordinarily permitted -we Jews don’t fast on festivals, but with Haman’s genocidal threat in the air the Rabbis allowed the fast. And it worked

The nation united, Hashem heard our plea and Haman went to the gallows on the second day of Pesach the 16th of Nissan.

It is an old Jewish custom to recall Haman’s yahrzeit by eating tongue. The midrashim say that he hung by his tongue-gross, but remember, the guy was a Hitler wannabe.

Another reason for the tongue is that Haman had the most evil tongue ever, worse than CNN, filled with accusations against us Jews so , we eat him all up until there’s nothing left.

In honor of all of this, I acquired one beef tongue, pickled it and set it in a lovely apricot sauce. Here’s a picture.

Now here’s the recipe

Boil the tongue until you can peel off the skin. This can take up to four hours of boiling.

Add bay leaves, pickling spice, dill and fresh garlic cloves to the cooking water.

Let the tongue cool and then peel back skin and slice.( You can eat it like this-according to customs expert Rabbi Duvid Meisels that is how the Chassam Sofer had his-see this is a real custom, not a bubba meiseh invented by me, ) or you can set it in sauce.

Apricot Sauce .

Saute three garlic cloves until soft -about 2 minutes (dont let the garlic burn)

Add 1 cup apricot jam (I used the all fruit sugar free kind), one 15 oz can of tomato sauce (425 gm) or 2 cups of ketchup

1 t black pepper

Boil together and then pour over tongue. Heat gently together. Serve over mashed potatoes if you’re Ashkenazi or rice if you’re Sephardic.

Freezes well.

If you don’t feel like fussing you can use any good bottled rib sauce. It will be just as yummy.
