Green Eggs and ……


Iranian Omelet

Look at all those great greens!

I don’t know which green eggs it was that Dr. Suess’s notoriously finicky Sam didn’t like, but I bet it wasn’t Kookoo Sabzi. Kookoo Sabzi is a very yummy and very healthy Iranian frittata like dish which happens to be green . If the name Kookoo Sabzi will inspire contorted faces, or jokes about the mental state of the Iranian President, then just call it a Persian herbed omelet, but try it please.

Not only does this dish taste good, but it’s a world class power food. Wedding all those iron packed greens with eggs will make you strong. I just hope you won’t feel inspired to start building nuclear reactors!

Though I don’t think the Macabees ate Kookoo Sabzi., this dish fits the upcoming holiday because it’s fried. The Encyclopedia of Jewish Food says that Iranian Jews ate it on Chanuka. .

Of course we fry foods on Chanukah to recall the one remaining flask of pure oil which the Macabees discovered when they entered the defiled Temple, a symbol of the miraculous victory of pure faith (the Jews) over brawn (the Greeks).

Iran’s Jews could use another Chanukah victory today. The Jewish community which dates back to the first temple is still in existence but Iran’s Jews can’t emigrate. Visiting Israel is a crime punishable by jail time nor can Jewish tourists visit freely even though the graves of Mordechai, Esther and Daniel (of lion’s den fame) are all located there.

That’s something to think about as the Chanukah candles burn.

So here’s the recipe

2-3 eggs. I like to use organic or free range laid by chickens who lead happy lives

Half a bunch of fresh coriander (or three frozen cubes)

Half a bunch of fresh parsley

Quarter of a bunch of fresh dill

Half an onion or three scallions

Chop all the vegies fine

Lightly grease a ceramic non stick frying pan (2 tablespoons of vegetable oil or ghee)

Lightly beat the eggs

Add spices, salt, pepper, turmeric to taste

Chop the herbs and onions or scallions are finely as you can-use fresh or frozen,never dried. . You can also substitute fresh spinach leaves for the herbs

Combine the herbs with eggs

Pour the mixture into a heated greased frying pan. Fry until lightly browned, then flip over

Cut the kookoo into wedges and served with yogurt and rice or crusty bread and feta cheese too

There you have it, a meal in a frying pan.

Serves three. You can freeze this !
